About Me

Hey there! I’m Lana Spieler, a classically trained pastry chef and the founder of Frilly. With a background in painting and drawing, I approach pastry with an artist’s perspective—balancing flavour, texture, and form with careful intention.

I’ve worked in several of Toronto’s notable kitchens, including Richmond Station, Alder, and Bar Eugenie, where I refined my technical foundation while developing a thoughtful and creative style.

Outside the kitchen, I find inspiration moving through the city—exploring neighbourhoods through pastry crawls to discover what other chefs are creating, always searching for the next spark of inspiration.

Through Frilly, I bring together artistry and technique to create desserts that feel refined, expressive, and quietly memorable.
